SPETZOFAI ( Pelion)
In a deep skillet, heat 4 tablespoons olive oil. Put the peppers and saute over medium heat for 3-4 minutes . Add the tomatoes, bay leaves and garlic . Add sugar, salt, pepper and leave to cook over low heat for 8-10 minutes .
In a second saucepan, add 2 tablespoons of olive oil to keep warm . Add the sausage and cook until well browned . Add the liquor and the alcohol evaporates just throw the sausages to the pan with the sauce .
Let spetzofai to boil for 8-10 minutes and serve hot or warm .
for 4-6 people
• 1 sausage , cut into chunks
• 1 kg of green and red peppers , cut into wide strips
• 1 cup of chopped tomatoes
• ½ tsp sugar
• 2 bay leaves
• 2 cloves of garlic, chopped
• ½ cup olive oil
• 1 shot of raki
• salt and freshly ground black pepper
